PORTUGAL AND SPAIN | Acorn Ham


Acorn ham comes from the Iberian black pig. This pig also known in Portugal as  Alentejano,, is a breed of the domestic pig (Sus scrofa mediterraneus) that is native to the Mediterranean area. The Iberian pig, whose only origin can be traced back to ancient times, is found in herds grouped in the central and southern territory of the Iberian Peninsula (Portugal and Spain).

“The meat of Iberian acorn ham contains veins of infiltrated fat that give the ham extraordinary qualities, both in terms of aroma and flavor as well as its healthy properties.”

Did you know?! That in Portugal, it is prohibited to sell products with the designations “black type” or “pata negra”, in order to mislead the consumer, thinking they are buying products of the black pig breed. 



Pata negra is not the same as Iberian ham. An Iberian ham does not necessarily have to be black, as shown in the video below. The expression “pata negra” refers to the color of the spark and although most Iberian hams are normally black spark, not all pigs have the black spark, nor is the black spark exclusive to this breed.
